Aw, Shucks! Oyster Farmers Dish on Peconic Aquaculture: Friday, March 11th, 7:00pm - ZOOM
A hundred years ago, oysters were a commodity, eaten by everyone, cheap and as readily available as a bag of chips. But how is today’s oyster different? Charity Robey will draw on her work on the culinary history of oysters to lead a discussion on the way oysters are raised locally with three oyster farmers: Ben Gonzalez of Southold Bay Oysters, Stefanie Bassett of Little Ram Oysters, and Phil Mastrangelo of Oysterponds. They’ll discuss the differences in appearance and taste in oysters grown in varying conditions. They’ll also talk about the reasons that oyster aquaculture is growing in NY, and what some of the challenges are.
